Peanut Buttery Banana Bread!

Finding a banana that's black and ready to be made into banana bread in my house is like finding a needle in a haystack. Chances are, you won't. 

When there's a monkey in the house (that would be me) who eats each and every banana as soon as it's ripe (and sometimes before it's even nice and freckly), bananas don't stand a chance at making it to the 'banana bread ready' stage.


But sometimes miracles happen, and you find 4 mushy bananas in the freezer.


And then you get to make healthy banana bread with lots of peanut butter and chocolate chips and eat it in bed while wearing socks with bananas on them. Because it's summer, and you can.

Or because my life motto has become "Eat bananas, wear bananas."

Especially if there's peanut butter involved in this extreme banana eating, which there is in this case (otherwise, I'd be wasting your time).












This banana bread has become the highlight and bane of my existence. It's the highlight of my existence because it tastes so good. It's the bane of my existence because it tastes a little too good.

It's a problem because when I bake banana bread, I get the urge to eat the whole loaf by myself like the selfish 5 year old that I am. Add peanut butter chips, and my self control doesn't stand a chance.


You can probably tell by now that when it comes to banana bread, I don't play no games. This bread is a healthier version of classic banana bread, AND it has peanut butter chips in it. So basically this banana bread is on another level. It's in a league of it's own.


Low Fat Peanut Butter & Chocolate Chip Banana Bread

Ingredients:

  • 4 ripe medium bananas, mashed
  • 1-1/4 cup all purpose flour
  • 1/4 cup unsweetened apple sauce
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 2 large egg whites
  • 1 1/2 tbsp butter, softened
  • 1/2 cup light brown sugar
  • 1/2 tsp vanilla extract
  • LOTS of peanut butter and chocolate chips (1/2 cup to a cup or more if you're feeling crazy!)
  • baking spray

Directions:

  • Preheat oven to 350°. 
  • Grease an 8x5 inch loaf pan with baking spray.
  • In a medium sized bowl, combine flour, salt, and baking soda with a whisk. Set aside.
  • In a large bowl cream butter and sugar with a mixer. 
  • Add egg whites, bananas, apple sauce and vanilla, and beat at medium speed until thick. 
  • Add flour/dry ingredient mixture, then blend at a low speed until everything is combined. 
  • Pour batter into the loaf pan and bake for 40-50 minutes, or until a toothpick inserted into the batter comes out clean. (I insert in the center)
  • Put on your banana socks, and do a happy dance while the pan cools.



I'm just a tad obsessed with my banana socks. Can you tell? Also, only one day until the weekend. Any big plans?

I didn't have the ingredients to make it and really didn't want to brave the grocery store, so that's why I ended up using the chips instead. But doesn't hers look dreamy?

Especially with all the varieties you can have with it.... oh lawd. I just made a loaf today for my friend's birthday.. and I can't believe I'm not even stealing a piece efor myself.   8. Omg I LOVE those socks!! Whenever I see fun socks in the store, I can never buy them because they aren't big enough for my huge feet haha! But seriously, your socks are too cute.

    Do you think you could manage to save a slice for me? ;) The peanut butter chip addition is seriously genius. Peanut butter chips happen to be like the best everything better. I used to put them on sweet potatoes alllll the time. I need to start doing that again!!!

    1. Even though I'm 5'9, my feet are size 7- 8. My cousin who's 5'2 has bigger feet than me! I do like have smaller feet when it comes to one size fits all socks! Girl if I could send you a whole loaf, I would. I didn't originally plan on putting peanut butter chips in, but I thought of them last minute, and I'm so glad I did! And omg! I've been trying to think of add ons for sweet potatoes, and I'd never thought of peanut butter (heart eyes emoji inserted here please)

  12. Hi Katherine- first of all, thanks for your comment on my Vegans eat lettuce post. Also that banana bread looks. so. good. I literally have to hide bananas away in my section of the fridge (from both my family and me) if I want to get them nice and brown.

  13. I have been RIPPING through banana bread!! I have been baking like a boss because at Starbucks we ALWAYS have super ripe bananas. I LOVE it because I get to take them home. This looks SO good, and I LOVE the socks bahaha.
